Wine Harvest: first half of October
Vinification: Spontaneous fermentation – 9 months of aging on fine lees, in oak barrels
Tasting: Slightly toasted nose, like fresh bread. Then comes a note of candied fruits, round and fresh mouth.
Food & Wine pairing: Enjoy with oysters or fish, or Roquefort, sheep’s cheese, or country ham.
Conservation: 2 to 5 years
